Potsticker Tips

Potstickers, gyozas, fried dumplings, whatever you call them:

~ Don't boil them before panfrying them. They end up a mushy mess.

~ If they start out raw (freshly wrapped), do the following:
1. Heat a frying pan over the stove, add cooking oil enough to coat pan.
2. Place raw dumplings bottom down on the pan. Don't crowd them too much.
3. Fry the bottoms until desired brown-ness.
4. Add warm/hot water, and cover, to steam.
5. When water is all evaporated, tada! Ready to eat.

~ If they start out frozen, do the following:
1. Heat a frying pan over the stove, add cooking oil enough to coat pan.
2. Place frozen dumplings bottom down on the pan. Don't crowd them too much.
3. Add warm/hot water, and cover, to steam (approx. 8 min or so)
4. When water is all evaporated, remove cover and continue frying the bottoms until desired brown-ness.
5. Tada! Ready to eat.

Sauce thoughts...
~ My own homemade sauce: soy sauce, a touch of white vinegar, and chili sauce. (Wayne likes it sweeter so maybe some sugar.)
~ If you have the packaged sauce from frozen dumplings like Ling Ling or whatever, empty the packaged sauce onto a saucepan. Warm over stove. Add a tad of white vinegar and chili sauce and tada! Yummy sauce!
