What I'm Making Tonight

Happy St. Patrick's Day! The only reason why I would even notice this holiday is because of Wayne's insistance that I make corned beef. One of his favorites. I've tried several variations and have enjoyed them. This year I'm making an easy-peasy one out of beer:

Pub Style Corned Beef

1 large corned beef brisket (including spice packet)
+ 2 cans/bottles Guinness Draught
1 cup water
1/2 cup honey
2 cups small, halved red potatoes
1 cup cut up carrots
1 large onion, cut into wedges
1/2 head green cabbage, cut into wedges

Combine meat, beer, water, and honey in a large stockpot and bring to a boil. Reduce heat and simmer, covered, for 40 minutes per pound or until meat is very tender, adding vegetables to the pot during the last 30 minutes of cooking. Place meat on a cutting board and cut into 1/4- inch thick slices; place on a serving platter. Strain vegetables from cooking liquid and place on platter; drizzle with some of the cooking liquid.
